Don't let ZDP-189 intimidate you, you just need to touch it up every once in awhile *before* it gets extremely dull. It's hard to go wrong with the Sharpmaker if you have that, and adding the diamond rods for it makes it pretty straightforward to sharpen even duller knives. The key is patience, and...

For your purposes, H1. For overall uses, ZDP. For plain edge, not H1. The Plain Edge H1 will get harder and stronger as you use it and sharpen it, but the D'fly being such a small blade seems to shed much steel before this happens fully. I have an Endura ZDP. I have a Lansky and I didn't hate it until I sharpened ZDP on it. It will sharpen fine, I have mine to a mirror polish with the UF stone. BUT, it sucked. I'd go with the Dragonfly. All of it's models (H1 or VG-10) come with a steel that will beat BD-1, IMO. I think the blade shape is much more aesthetically sexy. The only thing you might find is that, it too, is a small knife. The UK will give you, IMO, a fuller size for the hand.

The parts of a ZDP knife are not ZDP. Think of how specialized every knife would have to be, every different steel having it's own different hardware in a specific steel. And even getting a steel as expensive as ZDP, keeping the prices down, and essentially wasting such a high quality steel on parts...

Announced this SHOT show, Caly 3.5 in Carbon Fiber handles, most like with ZDP laminate in the vein of the current Caly 3. I think announcement early spring.
