The Sharpmaker is a great deal. Just add a leather strop with some jeweler's rouge to the process and after a little experience it will perform as well as the more expensive sharpening systems.

If you don't baby the blades then the real difference is with you. If you are anal about your edge and can't handle chips you will probably be more happier with VG-10.
