I suspect it is for the same reason that Japanese chisels have hollow backs. Flattening the entire surface area of a fully-flat back is much more laborious in time and stone-wear than for a blade with a hollowed portion. Quicker and easier when hollow ground. Nice concept. What ergos would you change on the next go round? I would try to find a way to widen the handle below the hole. Just a heads up. Jeff said that these knives will be going up in price as they start to sell out. He said that it's an attempt to keep the eBay flippers at bay. So don't wait thinking they might drop in price later on.

Mine have never moved. Primarily because I never use them. They stay nice and snug in their horizontal slots.

Handles are not tough and it's cool to have made your own.
