In term of function, I think non-SS handles served the purpose.

Only that for SS handles, you can easily wrist-flick open your knives, and the heft feels good in your hand.<img src="smile.gif" width=15 height=15 align=middle border=0>

Whichever you choose, get PlainEdge and Serrated each if you can afford it. Eventually you'll find out that certain thing is best handled by either one of the edges.

My opinions :
1) It will eventually wear the edge flat, but it will take a mighty long time!<img src="smile.gif" width=15 height=15 align=middle border=0>
2) You'll need a sharp angle sharpener for that, which I don't know as yet.
