Honestly, Wusthof's steel isn't hard enough to stand up to edge angles that acute. I think the Big 3 (Wusthof, Henckels, Sabatier) all harden their knives to maybe 58 HRC. At those blade angles, you'll probably roll the edge a lot. You're better off using the Sharpmaker to slowly change the angle to...

Would the Mule Team SPY27 make a good steel for whittling? I was thinking I could hand grind a finger choil where the nub is located to give me more control. It’d would be a fun project and that mule doesn’t cost so much and it can be replaced if I damage it to much. Good steel? It's probably fine....

IMO, Magnacut sounds like a great all-around stainless blade steel. I definitely want to try out a knife in it. That said, I won't be getting rid of any of my non-Magnacut knives, which right now is all of them. In another thread, someone posted that they're replacing all their Spydercos with Magna...

If I knew I was going to be cutting just a ****ton of rope and/or cardboard, I would get something optimized for wear resistance like that new CPM-15V they're pushing.

But I don't know that. So yeah. Magnacut.
