for both the delica and military i carry, i like keeping the edges polished. edges just look cooler to me mirrored. for the most part, i just use the knives to break down boxes or cut food. the polished edges are a result of using the spydie course, fine, and extra fine rods. i really didn't set out...

Spydie Military
Hi: I use the Spydie Military Lefty model for food duties. I don't like cutting steak with those single use serrated steak knives. I do make sure to slice the steak horizontally so the blade never touches the ceramic plate. Or if rice or noodles are available, i place the steak on top and slice away...

cool beans with the sharpening. the SM system really opened my eyes to sharpening stuff and i find myself using the knives more because I maintain the edges myself.
