Interesting comparison and very close up videos of cuts. The grit progression didn’t matter as much. More about getting a correct apex with the coarse stone. Stropping is optional but can be good.

Interesting looking knife. I was expecting to see a $16 Mora Companion after reading the title. What kind of steel? Sandvik 12C27. I do love my Mora knives but sometimes I want a full flat rather than a scandi. Handle is very comfortable and more grippy after putting the electric tape on it. Have y...

VG10 works well with the sharpmaker too. Touched my up on the 15° angle and takes a nice edge.

I should pick up a VG10 Endura. Seems like it would pair well with my Swiss Army knife. Both lightweight but useful for different tasks

Another reason to love salts. I by accident set this in some poison ivy (dried leaves and vines) while working in the back yard. Was able to scrub it down with soap and water. I still caught a rash lol

I use my salt knives for food prep all the time. I don’t use them on super dirty stuff daily anyway and I can always wash them in the sink when done.
I would wager that a fixed blade is better for food prep as it’s easier to clean than a folder.

I’ve also noticed that many reviews/channels that are geared towards beginners often say edge retention is the best attribute of steel. I would argue easy of sharpening for the beginner.

Thanks! I’ve been really surprised with the VG10 on my Delica I bought last year. No chips or rolls and the retention has been really good. Interesting you'd say that: I always have the feeling that "new" VG10 (so on my newer Seki Spydies) holds an edge longer than "old" VG10. C...
