Chef knife care

Question for all you chefs out there. I have an Opinel chef knife that my wife uses ALOT. She is a fantastic cook and makes 90% of everything from scratch at home. So the knife get used heavily. Sometimes there will be little flat spots along the edge. I’ve mentioned not cutting on ceramic plates we ...

Re: Victorinox photo and discussion thread!

To anyone who has the Spartan with the wood scales, are they slick feeling? That’s my one issue with the alox models, they don’t feel secure like the plastic.

Re: Victorinox New Range

If I didn’t own some Swiss Army knives already maybe it would, I like the pocket clip but for $80? The steel isn’t worth that. The appeal for me of SAK is a cheap knife to beat on because it’s $25

Re: Victorinox photo and discussion thread!

Looks interesting, especially the pocket clip but I’d rather not have a liner lock on it. Price is kind of high though

Noted.

The advantage of an FRN variation is, color and steel options.

Maybe a salt version down the line?

I have the newer more powerful version too, the 29 I think.
Does it have a decent run time for the high and medium modes? Looks like it according to their specs but real world can be different.

Delica and some fresh bread. We started milling our own flour and the results have been way better.

Looks like people were prying with those. I assume it would snap by the hole because there is less material.

What are people impressions this far? Does the finger choil feel cramped?

I like the SAK tinker size and this model is pretty close to that. I like a small pocket knife for around the house. My other consideration is the Metropolitan.

Hi Vivi,

Right now, not likely in SPY-27. I wanted one with teeth, but we don't have a new source for the steel yet.

sal
How is all that going with finding a new steel supplier?

Re: Community Sharpening Journal, Part 2

4. Using light pressure is key. I use light enough strokes with the sharpmaker that I ro not need to secure the base with my off hand or a clamp or screws. If you're pushing hard enough on your finishing strokes you slide it around without holding it with your off hand, you're using too much ...

Re: What Spyderco is in your pocket today??

Rugernurse,

I got a couple of Streamlight torches this size that are really handy little lights. They look just like these you got here.

I like this size. I am looking for a larger flashlight to keep in my backpack for hiking, longer trips, etc. I used to figure a flashlight was not needed ...

ButtonUp

I don’t think I saw a thread about this one yet. The description says it was Spyderco’s first ever manual button lock. I thought the Sage 6 was the first button lock?

Either way this model has me very interested. Price is nice and looks a smaller PM2. Hopefully the detent is good on it.

People downplay VG10 too but it serve me well as a normal knife steel. I use my Delica for opening boxes, packages, zip ties, etc. I appreciate the super steels for what they offer but my daily uses don’t require it.
