Test smoking run on dehydrated peppers. The smoke flavor wasn't all that great and the sweetness of the peppers disappeared. I am completely satisfied with the Itamae Murray Carter knives, the Spyderco Santoku and the 6.5" SE kitchen knife. For smaller knives to supplement, I've got the 3-knife Victorinox set. Add your favorite fillet knife and you're set.

These Scotch Bonnet pods will get dehydrated, smoked, ground, then mixed with the various Paprika peppers that I grew this year. They will add fire and sweetness to my flakes and powder. Have you ever used the Flatiron Pepper Grinder? It slices the flakes instead of grinding them. I really prefer it to sprinkling crushed red pepper flakes onto food.
