I know this is an old thread but here's mine.
1. Vanax Superclean(Unfortunately hard to find a knife it) : BC. its near stainproof and holds an edge like S30V or better
2. S35VN : BC. It's very tough for everyday use or even for large fixed blade knives(may be replaced by S45VN soon)
