This one comes to mind, for me. PM2 is a great knife and 15V is one of my favorite steels. Top favorite for edge performance for my usage. A fixed blade with glued scales that are not porous/absorbent is probably the easiest to keep clean, assuming the sheath is also easily cleaned (kydex or other plastic that are washable without ruining the sheath). Stainless knives that are easily washed without issue are also good... I do like fold...

Fascinating stuff, Shawn. Thanks for the micrographs, those are really interesting to see! You pull no punches when it comes to big kitchen knives with the high carbide steels. That big 15V kitchen knife you made some time back still haunts my thoughts from time to time (in the best way).

So, how would the edge angle affect the results? Say, 30º inclusive vs 20º inclusive? What was the angle of the edge being tested and how thin behind the edge was the blade? Definitely will have to get a G10 Para 3 with 15V. Was hoping that would happen, I do like the Para 3 as a sub 3 inch knife.
